The present article will try to reconstruct a part of the industrial landscape that generates the viticulture and viniculture in the colonial period. To the cultivation of the vines it sinks the production of wines and liquors, elaboration that was carried out in wine cellars with peculiar characteristics and with simple presses, using local materials. Therefore, starting from the information obtained in the documental funds of San Juan's County, we will compare methods and elaboration utensils (ad-hoc) with the practices developed in the peninsular environment, in order to demonstrate that, in spite of presenting a continuity in the vine and wine tradition, clear differences take place between one and another environment
