Viticulture in Mendoza has a long tradition originated in the foundation times. Limited knowlege about  this activity development in the first three centuries of the city,  make us consider that viticulture was not so important as it really was. Recently, many important researches have made us know the past of wine industry in Mendoza, where fine wines were produced in the XVII and XVIII centuries. From the basic domestical winery, frequent in the properties around the  city, new wineries with an advanced technology were built to provide fine wines and brandy.  This perspective, let us  know how the mendocinian wineries were built, which were their technical settlings, their shapes, their materials, how they functioned and related with other  rural buildings, which were the other buildings in the farm and how was the relation between the winery and the city
