Wine has been associated to civilization in the Hellenic archaic and classical world. However, the equation "wine=civilization" has always had to deal with the problem of drunkenness -phenomenon that generated prescription on the correct form of drinking and living. The purpose of this paper is to make emphasis on how wine contributed to the birth of moral philosophy. It is shown that reflections on wine consumption made by the seven sages and the archaic lyrics inspired the prescriptions of self domain and the tendency to the mean between excess and deficiency, characteristics of the kalos kagathos, that is of the morally correct human being of the classic ethics. Briefly, to the widely known quotation "In Vino Veritas" it should be added a second part that states "In Vino... Ethics"
