Our investigation throughout the methodology of the complete rebuilding of the economic facts has allowed us to form the supply and demand of wine products in the period of 1780/1883, prior to the boom that happened at the end of the nineteenth century. Therefore we have been able to fulfill great voids and to correct serious interpretation mistakes about different periods and to discover unknown aspects of its evolution. Besides, there has been analyzed in a precise way the effects of free commerce, the decadence of the traffic, the impact of the civil war, the ignored and frustrated resurrection of the sixties, the world crisis of the seventies, etc.
