This article presents empirical sustrate of colonial mills industry in Mendoza. So far, the reader can also find geographical location of some of them in his historical available cartography. Production of flour was directed basically to the intern consume. In some cases of excees, this were sold to the other provinces likes San Luis or Córdoba
