The antioxidant activity of hydro-alcoholic extract of lemongrass was determined using two methods: i) 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS); and ii) ferric reducing antioxidant power (FRAP). The content of phenols using the Folin Ciocalteu reactant was also determined and the in vivo effectiveness of this extract using lard as a parent oxidant and the Rancimat method was evaluated. Ethanol 50% v/v was the best solvent to extract the bioactive constituents capable of stabilizing the lipid material from pork fat and protect it against oxidation. According to the results lemongrass extract exhibits a high antiradical phenolic compound content and a high reducing power. Regarding the antioxidant effectiveness it was found that lemongrass extract with a concentration of 250 ppm can double the time of induction with respect to the control fat.
