A study was carried out on the joint cold storage of several different apple and pear varieties in a room equipped with an ethylene absorber, in order to evaluate the development of ripeness in the fruit during storage. The hardness of the fruit was determined weekly using a penetrometer, as were soluble solids content using a refractometer. The results showed that the resistance to penetration shown by the pears decreased, beginning with their introduction to the cold storage room . Resistance to penetration of the apples decreased in the first months, and tended to stabilize in the third or fourth month depending on the variety. The soluble solids content of both apples and pears increased during the earliest days of storage, and later, the values remained somewhat constant with slight oscillations depending on the variety.
