Two models, based on experimental data, that describe the process of drying and the deterioration that occurs during the processing of biological materials, are proposed in this article. Jalapeño pepper (Capsicum annuum L.) and apple slices were used for generation of experimental data. Rehydration capability on jalapeño pepper and color changes on apple slices were used for measurement of deterioration. The proposed drying model was used with the classic equations this unit operation to predict the processing time. Based on these models, a computer program for the analysis and prediction of the mass and energy balances was developed as a useful tool in the scaling or design of the drying systems, as well as the damage that the material will suffer. The software developed showed an excellent performance when experimental data have low dispersion
